Canning Peaches

It's time to can peaches!  This is what has worked for me thus far.  What variety do you can and where do you get them?

40 pounds peaches (I like Elberta and Delp Hale)
21-22 Quart Jars, lids and bands
17 c. water
7 c. sugar

The ratio for a light syrup is 7 cups water to 3 cups sugar.
